Start Your Engines Sandwich

Serves: 8 Sandwiches
 
Ingredients:
  • 1(1 lb. 0-3 oz.) can 
  • Phillsbury Grands Refrigerates Buttermilk Biscuits 
  • 8 Slices bacon, halved 
  • 1 tbsp margarine 
  • 1/2 cup chopped green bell pepper 
  • 1/2 cup chopped onions 
  • 8 eggs beaten 
  • 8 (2/3-oz) slices American cheese
Preparation:
  • Prepare Grands Biscuits and bacon as directed on packages 
  • Melt margarine in skillet, Add bell pepper and onion ; cook and stir until tender. 
  • Pour eggs into skillet; cook until set, stirring occasionally. Season with salt and pepper to test 4. Split biscuits, fill each with egg, cheese and bacon.
 
Caraway Egg Spread

Serves: 4
 
Ingredients:
  • 4 ozs. cream cheese, room temperature 
  • 1/4 cup sour cream 
  • 8 hard boiled eggs, peeled and finely chopped 
  • 2 T grated Parmesan cheese 
  • 1 teaspoon caraway seeds 
  • 1/4 tsp salt 
  • 1/4 tsp black pepper 
  • Pinch cayenne pepper
Preparation:
In a mixing bowl or food processor combine cream cheese and sour cream until smooth. Add the eggs, cheese and caraway seeds, salt, pepper and Cayenne pepper. Stir until blended. Refrigerate overnight. Spread on bread of choice.
Comments:
I also use this recipe for deviled eggs. Except I use 12 eggs and use the white from all 12 and half the yellows. Increase other ingredients accordingly.
 
Mexican Peanut Butter Sandwich

Ingredients:
  • 2 tbsp Peanut Butter 
  • 1 tbsp Jelly (Favorite Flavor) 
  • 1 Flour Tortilla
Preparation:
Spread Peanut Butter on an open tortilla. Place in Microwave for 30 seconds. Once removed spread jelly and mix in evenly with peanut butter. Roll up like a burrito. Enjoy while peanut butter is still warm.
Comments:
Great quick midnight snack.
 
Lemon Dill Chicken

Ingredients:
  • 2 tbsp. butter 
  • 1/4 tsp. salt 
  • 1/4 tsp. dill weed 
  • pinch of black pepper 
  • 1/4 tsp. minced fresh garlic 
  • 2 whole boneless chicken breasts skinned halved 
  • 2/3 cup sour cream 
  • 4 oz. cream cheese softened 
  • 1/2 tsp. dill weed 
  • 1/4 tsp. salt 
  • 1 tbsp. lemon juice
Preparation:
In 10" skillet melt butter until sizzling stir in salt dill weed pepper and garlic add chicken breast cook over mid high heat till browned on each side (10 to 15 min) In a small bowl stir together remaining ingredients serve on French roll or hoagie buns spoon on about 1 tbsp. cream cheese mixture on top and bottom of bun.

Zesty Shredded Beef

Serves: 5-10
 
Ingredients:
  • 2-4 pound London Broil Roast 
  • 1 medium jar of pepperoncini peppers 
  • 1 Tbs dried oregano 
  • 2 cloves crushed garlic 
  • dozen or so sausage rolls (hard rolls)
Preparation:
Place the roast in a slow cooker. Add the garlic, oregano, and the whole jar of pepperoncini peppers, juice and all. (If you like things really hot you can substitute jalapenos!) Set the slow cooker on medium and let cook for 6-8 hours. When roast is very tender, take 2 large forks and shred it. Set the cooker to low and let the shredded beef soak up the pepper juice for another hour. Serve on hard rolls.
 
Comments:
This is a great recipe for a night race! Toss it on in the morning before heading out to work or whatever, and when you get back, voila! Dinner is served! This is great with my potato pancakes (the recipe for which I will submit as soon as I find it!!!)
 
Yummies - Open Face Sandwich

Ingredients: 
  • 1 to 4 slices of French bread 
  • softened butter 
  • grated parmesan cheese 
  • Haas avocado slices 
  • garlic or onion powder 
  • tomato slices 
  • salt
Preparation:
  • French bread best cut about 1" thick slices. 
  • Spread one side of bread with softened butter. 
  • Sprinkle on parmesan and garlic or onion powder 
  • Grill under broiler until toasted golden brown. 
  • Remove toasted bread from broiler. 
  • While still warm, spread toasted bread with mashed or whole avocado slices and top with sliced tomato. 
  • Add salt, if desired
     
Comments: 
We love this simply delish dish, and prefer Sourdough french bread, but other breads do well. Another favorite topping to this toasted parmesan cheese bread is Peanut Butter, spread on while the bread is still warm... gooey n' good... Experiment and Enjoy! Toaster Oven/broiler is best appliance to use as it offers good heat control.
