Southern Pecan Pie

Ingredients:
  • 3 eggs, lightly beaten
  • 1 cup Karo syrup (light corn syrup)
  • 1/2 teaspoon vanilla
  • 1 cup sugar
  • 1 cup pecans
  • Unbaked pie shell
Preparations:
Preheat oven to 350 degrees. Mix together eggs, Kero, vanilla, and sugar; mix well. Add pecans. Pour into pie shell. Bake in oven for about 55 minutes.
 
Easy As Pie!

Ingredients:
  • 1 half-gallon of ice cream (vanilla or cookies and cream, or even toffee), softened slightly
  • 1 container of Cool Whip
  • 1 package of Oreos, crushed
  • Hershey's Chocolate Syrup - amount to be determined by your personal preference for chocolate!
Preparations:
Spray two square casserole dishes with Pam. Firmly press crushed oreos onto the bottom of each pan, forming a crust. (reserving a little to sprinkle on top of each desert pan at the end.)Spoon softened ice cream over each crust, making it level. Scoop Cool Whip over ice cream, again making even and smooth. Sprinkle reserved oreo crumbson top, then drizzle Hershey's syrup over the top.
*you can make this more festive by adding shaved chocolate.

Place back into freezer uncovered to refreeze until firm.
It will stay fresh stored in freezer if covered in foil after it has rehardened - GREAT to make ahead of time, or use one now, save one for another occasion!

Remove from frig. a few minutes prior to serving to allow for easier serving.

YUMMY and EASY!!!!!!!!

You can use any flavor of ice cream - even the light versions, and the light or fat free cool whip tastes just as good as the regular flavor. The oreos, well, they have to be THE REAL DEAL!!! =)
 
Chocolate Layer Dessert

Ingredients:
  • 1 1/2 c. flour
  • 3/4 c. chopped nuts
  • 1.5 sticks butter, melted
  • 8 oz. cream cheese, softened
  • 1 c. powdered sugar
  • 2 (8 oz.) containers Cool Whip
  • 3.5 c. milk
  • 2 tsp. vanilla
  • 2 sm. boxes instant chocolate pudding
Preparations:
FIRST LAYER: Mix flour, melted butter and nuts, saving enough nuts to sprinkle on top when completed. Spread over the bottom of a 9 x 13 pan. Bake 20 minutes at 350 degrees; let cool.

SECOND LAYER: Use mixer to blend cream cheese, 1 container Cool Whip and powdered sugar. Pour over crust and spread carefully with a spatula. Refrigerate while fixing the next layer.

THIRD LAYER: Mix 2 boxes instant pudding with milk and vanilla. Beat until thickened and spread over second layer. Refrigerate 10 minutes.

FOURTH LAYER: Spread remaining Cool Whip over top and sprinkle with nuts.
 
Fruit Pizza

Serves: 13x9 pizza
 
Ingredients:
  • 1 can pilsbury sugar cookie dough (dairy dept) 
  • 1 8 oz packaged cream cheese  
  • 1 cup plain yogurt 
  • 2 packets sweet and low (sugar can be used sweeten to taste) 
  • Add your favorite fruit (blue berries, strawberries, black berries, banana's, kiwi etc...)
Preparations:
Crust: press cookie dough out onto a greased pizza pan or 13 x9 cake pan (found spraying Pam on one side of saran wrap makes an easy and clean way to press it out) cook per directions on container and cool. 

Sauce: mix together yogurt and cream cheese add sweetener (may add vanilla if desired) Spread mixture on top of cookie crust. 

Toppings: Slice up your favorite fruits, toss on top like pizza toppings (for cool look and sweeter taste sprinkle sugar or sweetener on top as last touch)
Comments:
If using bananas and not serving right away sprinkle lemon juice on bananas to prevent browing. For holiday color try sprinkling colored sugars on top for colorful crystal look.
 
Libby's Banana Split Cake

Ingredients:
  • 3 pkgs. ladyfingers 
  • 2 c. confectioners' sugar 
  • 1/2 c. softened butter 
  • 1 tsp. vanilla 
  • 4 bananas, sliced 
  • 2 (10-oz) pkgs frozen strawberries (thawed & drained) 
  • 1 med. can pineapple (drained) 
  • 1 lg ctn. cool whip 
  • 1/2 c. chopped walnuts 
  • approx. 24 maraschino cherries, cut in half
Preparations:
Cream sugar and butter. Using 13 by 9 inch cake pan, line bottom and sides with ladyfingers. Spread butter and sugar mixture over ladyfingers. Chill for 1 hour. Place bananas over butter and sugar mixture. Place strawberries over bananas. Place pineapple over strawberries. Spread on Cool Whip evenly. Sprinkle on walnuts. decorate with cherry halves. Chill for at least 1 hour.

Maw Maw Cagle's Tea Cakes

Serves: 30 cookies give or take
 
Ingredients:
  • 3 eggs 
  • 1 T. vanilla 
  • 1 c. sugar 
  • 1 c. shortening self rising flour
Preparations:
Pre-heat oven to 375 degrees. Cream vanilla, eggs, and shortening together. Mix in sugar. Add flour a cup at a time and knead until the dough becomes the consistency of biscuit dough. Roll out thinly on a floured surface. Cut into desired shape. Grease cookie sheet. Place cookies about 2 inches apart on cookie sheet. Bake until golden brown.
Comments:
These simple yet delicious Southern treats can be used in the place of vanilla wafers in chocolate, pineapple, and banana pudding. Slather peanut butter on the flat side for a whole new dimension in taste.
 
Cream Cheese Pie

Ingredients:
  • 1 6 oz. graham cracker crust 
  • 1 14 oz. can of Eagle Brand Sweetened Milk (condensed NOT evaporated) 
  • 1 8 oz. package of Cream Cheese 
  • 1/3 cup lemon juice (fresh or bottled) 
  • 1 teaspoon vanilla extract 
  • Topping (if desired): 1 can strawberry pie filling or Redi Wip
Preparations:
Let cream cheese stand at room temperature or heat for 45 seconds in microwave. In a medium mixing bowl, beat cream cheese until light and fluffy. Beat in sweet condensed mild. Add lemon juice and vanilla extract. Stir until well mixed. Pour mixture into pie crust. Chill until firm (1 hour). Top with desired amount of pie filling. Refrigerate any left over pie.
 
Lite 'N Fruity Pie

Serves: 1 whole pie
 
Ingredients: 
  • 1 small box Jell-O brand gelatin (any flavor) 
  • 1 small tub Cool Whip 
  • 6 ice cubes 
  • 1 pie crust (Keebler works best) 
  • add fruit slices, as desired 
  • garnish, as desired
Preparations:
Make jell-o according to box directions. In metal bowl, add jell-o and mix in the ice cubes. Remove the ice cubes when they become small and the jell-o starts to form. Add the cool whip, fruit, (if desired) and stir until the mixture is even. Pour into the pie crust, and garnish. Put into the fridge to chill for about 4 hours.
Comments:
Makes a wonderful summertime dessert, or a great trackside treat. Smaller, individual pie crusts may be used to share and enjoy!
