Ingredients: |
- 2
tablespoons refrigerated pesto
- 2
tablespoons mayonnaise
- 2 flour
tortillas
- 2 to 3
large romaine lettuce leaves, torn in large pieces
- 1 cup
(1/2 10 oz. package) PERDUE® SHORT CUTS® Italian
Style Carved Chicken Breast
- 1/2 cup
finely chopped tomato
- 1/4 cup
finely shredded mozzarella cheese

Cooking
Instructions: |
STEP 1 Mix
pesto and mayonnaise and spread evenly over tortillas.
STEP 2 Top tortillas with lettuce, chicken, tomatoes and
cheese.
STEP 3 Roll up tightly to serve. |

Low Fat Chicken Tacos

Ingredients: |
- 1 lb
chicken cubed
- 1 16 oz
can Italian stewed tomatoes
- four
tortillas
- light
sour cream
-
mozzarella cheese
- shredded
lettuce

Preparations: |
|
Stir fry
chicken cubes in light oil, add stewed tomatoes & simmer
1 min or until thickened, warm tortillas, spoon chicken
mixture onto tortillas & top w/other ingredients as
desired. |

Chicken Cacciatore

Ingredients: |
- 3 lbs.
Chicken Breasts
- 1/2 cup
Berio Virgin Olive Oil
- 2 cans
Tomato Paste
- 3 1/2
cups Water
- 1 large
Onion
- 2 fresh
Garlic Cloves
- 1 1/2
teaspoon Salt and Pepper (each)
- 1 Cup
White Table Wine (Sauterne)
- 1 box of
SeaShell Noodles

Preparations: |
|
Put olive oil
in an electric skillet (preferred) or a frying pan. Brown
chicken breasts. Add onion and garlic clove (both diced).
Cook until onion is transparent. Mix tomato paste with
the water, salt and pepper until well stirred. Add tomato
mixture to skillet. Simmer 1 hour. Add wine and simmer
for 15 minutes. Pour over cooked seashell noodles. Mama

Kan's Fried Chicken

Serves: 2-4

Ingredients: |
- 1 Whole
cut-up chicken
- 3 Large
Eggs
- 1/4C
Buttermilk (1/4C milk + 1Tbsp white vinegar may be
substituted)
- 2C All
purpode Flour
- 3Tbsp
Garlic Powder
- 2Tbsp
Onion Powder
- 1C Crisco
or Vegetable Oil
- Pinch
salt and pepper
- 1 Small
paper or plastic bag

Preparations: |
1.Put flour and
seasonings in bag, mix well
2.Mix eggs and buttermilk in Large bowl
3.Dip chicken pieces in egg mixture
4.Place coated chicken in bag and shake until well
covered with flour mix.
5.Repeat step 4 and set aside
6.Do this until all chicken is coated
7.Heat crisco or oil until a drop or 2 of water dances.
about 300
8.place chicken in pan and turn until all sides have
browned.
9.lower heat and cover with foil
10.cook until chicken is fully cooked all the way through
about 15min
11.return chicken to high heat uncover
12. fry until outsides crisps then ready to serve |

I love this
recipe a little time consuming, but well worth it. Total
process takes about an hour or so. I hope you enjoy it as
much as I do!! |

Chicken Divan

Ingredients: |
- 2-3 chicken breasts (bone-in)
- 1 package frozen chopped
broccoli (or fresh)
- 1 can Cream of Chicken soup
- 1/2 c. mayonnaise
- 2 t. lemon juice
- 1/2 t. curry powder
- 1 c. grated cheddar cheese
- bread crumbs

Preparations: |
Boil chicken until done in
water flavored with any herbs, spices that you like (I
use celery, onion, bay leaf, oregeno) Pick off chicken
meat.
Spread cooked broccoli in the bottom of a greased
casserole dish. Place cut up chicken on top. Mix soup,
lemon juice, mayonnaise and curry powder and pour over
chicken. Sprinkle cheese and then enough bread crumbs to
cover on top. Bake at 350 degrees for about 45 minutes.
