Bread
Irish Soda Bread

Serves: 2 loaves
 
Ingredients:
  • 4 cups unbleached white flour 
  • 1 teaspoon salt 
  • 3 teaspoons baking powder 
  • 1 teaspoon baking soda 
  • 1/4 cup sugar 
  • 1/4 cup soft shortening 
  • 1 egg 
  • 1 3/4 cups buttermilk 
  • raisins
Preparations:
Preheat oven to 375. Combine the flour, salt, baking powder, baking soda, sugar and raisins. Cut in the shortening with a pastry blender or a fork until crumbly. Beat the egg and add to the buttermilk. Add it to the dry ingredients and stir just until blended. Turn out on a floured board and knead for 2 or 3 minutes until smooth. Divide dough in half and place each piece in a well greased 8" cake or pie pan. Cut a cross on each loaf with a sharp knife. Bake for 35 to 40 minutes.
Comments:
Good hot or cold. Can be eaten plain or with butter, jam, or anything else that's good on bread. Enjoy!
 
Mexican Cornbread

Serves: 6-8
 
Ingredients:
  • lb hamburger meat 
  • 1 block mild cheddar cheese 
  • 1 can cream corn chopped jalapeno peppers ( I use the Trappey's sliced in a jar and chop from there) # depends on your taste 
  • 1 box Jiffy cornbread mix 
  • 1 egg 
  • 1/3 cup milk
Preparations:
Preheat oven to 400 Brown hamburger meat and drain Shred your block of cheese Mix Jiffy as directed w/ the 1 egg and 1/3 cup of milk Add cream corn and jalapenos to Jiffy and mix well. 

In cast iron skillet - pour 1/2 of the Jiffy batter Add hamburger meat and then pour the remaining batter on top. If it does not cover the meat completely it is okay. Top with the shredded cheese and place in oven until cornbread is nice and brown with the cheese melted.
Comments:
We like to have this with pinto beans on the side. I hope you enjoy.
 
Marda's Spicy Cheese Olive Bread

Serves: Approx. 16 slices
 
Ingredients:
  • 1 loaf un-sliced 
  • French bread 
  • 1/2 cup butter, softened 
  • 1/4 cup mayonnaise 
  • 2 cups grated Mozzarella cheese 
  • 1/2 cup finely chopped ripe olives 
  • 1 tsp. garlic powder (or garlic salt if desired) 
  • 1 tsp. onion powder
Preparation:
Cut French bread in half lengthwise. Mix together all ingredients. Spread mixture on cut side of bread. Bake at 350 degrees for 10-15 minutes or until cheese is melted.
 
Comments:
Serve this at a race day party and it will be a hit!
 
Jay's Beer Muffins

Serves: 15 - 18 Muffins
 
Ingredients:
  • 12 oz. can of warm beer 
  • 3 Cups bisquik 
  • 3 tbsp. sugar
Preparation:
Pour it all up in a bowl. (May foam a bit...) Mix it 'till it's all wet. Spray muffin tins with Pam. (or other spray grease) Put a heaping tablespoon of batter in each cup. Let rise 20 minutes. Bake at 425 degrees for about 15 minutes or until lightly browned.
 
Comments:
LMAO...this started out as a joke but turned out pretty good. My sister was makin' regular bisquits and I poured my beer in while she was getting water, it wasn't a whole beer and she added a little water. She told me I was cute and that I was eatin' it whether it was nasty or not. They turned out good so she made them again with a whole beer and no water. Try them out! Great on race day with BigDaddy's Chili!!!
 
Jack-O-Lantern Bread

Serves: 1 Loaf
 
Ingredients:
  • 1/3 c. Honey 
  • 1/3 c. brown Sugar 
  • 1/4 c. Oil 
  • 1 tbsp. Drambuie liquor 
  • 1&1/2 c. Pumpkin puree 
  • 1/2 c. chopped Walnuts 
  • 1/2 c. Raisins 
  • 1/3 tsp. Salt 
  • 1/3 tsp. Cinnamon 
  • 1/3 tsp. ground Cloves 
  • 1&1/3 tsp. baking powder 
  • 1&1/2 c. of whole wheat Flour
Preparation:
Preheat oven to 350 degrees. Combine honey, brown sugar, oil, Drambuie, pumpkin, walnuts, raisins, salt, cinnamon, cloves and baking powder. Mix well. Add flour. Blend until thoroughly mixed. Pour into greased loaf pan. Bake for about one hour, or until toothpick inserted in center comes out clean. Let cool in pan for about 15 minutes, then remove loaf and finish cooling on rack. Makes one loaf. Recipe can be doubled or tripled and extra loaves can be stored in freezer.
 
Comments:
We often bake this wonderful recipe in mini loaf pans (adjust baking time) and give them as special Party favors... we wrap the little loaves up in Halloween colored paper with the recipe written on the wrapping...our Guests or our Hosts love it... and the mini-loaves are a big hit with kids... This delicious bread is also great for Thanksgiving and Christmas celebrations... merely change the name to suit the occasion...Happy Holidays!
 
Onion Cheese Bread

Serves: 12-16
 
Ingredients:
  • 1 C chopped onion 
  • 4 t. vegetable oil 
  • 3 C biscuit/baking mix 
  • 2 eggs 
  • 1 C milk 
  • 1 1/2 C shredded cheddar cheese 
  • 6 t. dried parsley flakes 
  • 2 T butter or margarine, melted
Preparation:
Saute onion in oil until tender. Place biscuit mix in bowl. Combine eggs & milk; stir into biscuit mix just until combined. Stir in onion, 1 cup of cheese & 4 teaspoons of parsley. Spread the batter into two prepared 8" round baking pans. Sprinkle with remaining cheese & parsley. Drizzle with butter/margarine. Bake @ 400 degrees for 15-20 minutes or until cheese is melted and top of bread is slightly browned.

Broccoli Cornbread

Ingredients:
  • 1 8oz box frozen chopped broccoli 
  • 1 8oz cottage cheese 
  • 1 cup shredded sharp cheddar cheese 
  • 1 box jiffy cornbread mix 
  • 1 med onion chopped 
  • 3 eggs 
  • 1 stick melted butter
Preparation:
Cook and drain the broccoli. set aside for time being. mix eggs, cheeses, cornbread mix, onion, and melted butter. add this mixture to the broccoli and mix together real well. pour this mixture into a greased pan. bake for 25 minutes at 400.
 
Pumpkin Bread

Serves: 3 loaves of Bread
 
Ingredients: 
  • 3 1/2 cups flour 
  • 1 cup oil 
  • 2 tsp baking soda 
  • 4 eggs 
  • 1/2 tsp salt 
  • 2/3 cup water 
  • 1 tsp cinnamon 
  • 2 cups of canned pumpkin 
  • 1/2 tsp cloves 
  • 1 cup nuts (optional) 
  • 1/2 tsp ginger 
  • 3 cups sugar
Preparation:
Set oven at 350 degrees Sift dry ingredients together including sugar,in a mixing bowl. Add remaining ingredients and mix until smooth. Divide batter into 3 well-greased loaf pans. Bake for 1 hour. Cool slightly in pans and then turn onto rack to finish cooling. Enjoy!
 
Comments: 
Excellent for holiday parties and family gatherings. Makes a great gift for friends, co-workers your childrens teachers etc...
