Cheesy Meatloaf

Ingredients: |

1 1/2 lb. ground Sirloin
-
3/4 cup Saltine Cracker
crumbs
-
1 medium Onion (Diced)
-
1/2 cup small curd Cottage
Cheese
-
1/2 cup shredded American
Cheese
-
1 Egg (beaten)
-
1/4 cup Ketchup
-
1 tablespoon Worcestershire
Sauce
-
1/4 cup Romano Cheese
-
Salt and Pepper to taste

Preparations: |
|
Preheat oven to 300 degrees. Mix
all of the above ingredients together EXCEPT Romano cheese.
Form into a loaf. Sprinkle grated Romano cheese on top. Bake
for 1 1/2 hours. |

Hawaiian Venison

Ingredients: |

1 pound venison steaks
-
1/4 cup flour
-
1/4 cup butter
-
1/2 cup boiling water
-
1 teaspoon salt
-
2 to 3 green peppers
-
1/2 cup pineapple chunks
Hawaiian Sauce
-
2 1/2 teaspoons cornstarch
-
1/2 cup pineapple juice
-
1/4 cup vinegar
-
1/2 cup sugar
-
2 1/2 teaspoons soy sauce

Preparation: |
|
Cut steaks into 1-inch cubes,
cover with flour, and brown in hot fat. Add water and salt
and simmer until tender. Clean peppers, cut into 1-inch
squares, and boil 10 minutes. Then drain. Add pineapple
chunks and pepper squares to browned meat. Pour Hawaiian
Sauce over meat mixture and simmer 5 minutes. Serve over
Chinese noodles or cooked rice. |

Cola Roast

Ingredients: |

1 tsp salt
-
1/2 tsp. pepper
-
1/2 tsp. garlic salt
-
4 to 5 lb. bottom round
roast
-
3 tbsp. vegetable oil
-
10 oz. btl. cola flavored
beverage
-
12 oz. btl. chili sauce
-
2 tbsp. Worcestershire
sauce
-
2 tbsp. hot sauce

Preparation: |
Combine salt, pepper and garlic
salt. Rub over surface of the roast. Brown roast on all sides
in vegetable oil. Drain off drippings. Combine remaining
ingredients; pour over roast. Bake at 325 degrees for 3 hours
or until tender.

Spicy Vegetable Beef Stew

Ingredients: |

1 lb ground beef
-
1 lb pkg smoked or Polish
sausage*
-
1 onion, chopped
-
4 med. potatoes, cut in 1"
cubes
-
1 small pkg baby carrots
(or 4 sliced carrots)
-
3/4 c. chopped celery
-
1 can whole-kernel corn
-
1 can Rotel (tomatoes &
green chiles)
-
1 can stewed tomatoes
-
1 can chili beans
-
23-oz can tomato juice
-
2 cans Veg-All (mixed
vegetables)
-
1 tbsp. salt (or to taste)

Preparation: |
Slice sausage into 1" slices.
Brown hamburger meat in skillet with chopped onion and sliced
sausage. Mix all ingredients (including meat) in LARGE pot or
crock pot. Cook on low to med. heat until potatoes are
tender. Approx. 3-4 hours. Remove from heat & serve with
crackers or corn bread.

Sausage is the kind that looks
like a huge weiner, usually one or two sausages per pkg. I
don't drain the vegetables because I like the extra juice in
the stew. Additional can of Rotel can be substituted for the
plain tomatoes for extra spicy taste. |

Beef Enchiladas

Ingredients: |

2 lbs ground chuck
-
1 large onion
-
1 large green pepper
-
1/2 c. picante sauce
-
1 T. chili powder or
-
1 pkg. of chili seasoning
-
12 large flour tortillas
-
3 to 4 c. grated cheese
-
1/4 lb. butter
-
4T. flour
-
1 and 1/2 c. milk
-
1 pt. sour cream
-
green olives, optional

Red Sauce: |
-
1 med. onion
-
1/2 green pepper
-
1/4 t. garlic salt
-
1 t. chili powder
-
4 small cans of tomatoe
sauce
-
3/4 c. water
|

Preparation: |
Simmer hamburger, onion, green
pepper. Drain grease from ground chuck, add picante sauce and
chili powder. Fill center of the tortillas with the meat
mixture, top with 1 tablespoon cheddar cheese. Roll up each
filled tortilla. Place in large greased casserole dish. Melt
butter in suacepan;stir in flour. Add milk and stir until
slightly thickened. Blend in sour cream and stir until
smooth. Pour the sour cream sauce over enchilades. RED SAUCE:
Brown onion with green pepper. Pour in tomatoe sauce and
water. Sprinkle with the garlic salt and chili powder. Add
any leftover meat mixture. Pour over the sour cream mixture.
Sprinkle with leftover cheese and olives. Bake at 350 degrees
for 20 minutes.

Comments:
For anyone that doesn't like sour cream, just pour the red
sauce over the tortillas, sprinkle with cheese and bake. For
anyone who loves alot of cheese, you may want to add a little
more. I always do. |

Spanish Rice

Ingredients: |

1-box of Rice A Roni
Spanish Rice
-
2-Tablespoons butter
-
2-cups warm/hot water
-
1-15oz can of Hunts Tomato
Sauce
-
1-medium Onion (I like to
use Vadalia's)
-
4-medium Plum Tomatoes
-
3-4 fresh Jalapenos
-
2-4 pieces
boneless/skinless chicken breast OR 1 lb browned hamburger

Preparation: |
-
Put butter & rice (from
box) in 6 quart skillet and stir until browned.
-
While rice is browning,
cut/chop Onion,Tomatoes & Jalapenos into 3/16" pieces.
-
When rice is done browning,
turn off heat and add seasoning mixture from box and
water.
-
Stir in Tomato Sauce and
cut up vegetables
-
Place chicken breast in
bottom of 6-8 quart baking dish, pour rice mixture over top
and Bake at 350 for 1 hour.
-
Place hamburger in bottom
of 6-8 quart baking dish, "stir" in rice mixture and Bake
at 350 for 45 minutes.

I like the chicken and my husband
likes the beef, so I alternate weekly. You can also try
adding some herbs/spices to enrich/enhance flavor such as
fresh cilantro, cumin, salt, pepper, italian parsley, thyme,
etc. |

Taco Casserole

Ingredients: |

1 lb. ground beef
-
1 pkg. taco seasoning
-
1 32 oz can refried beans
-
1 16 oz can peas
-
1 pkg. mozzarella cheese
-
1 pkg. taco chips, slightly
crushed
-
1 head of iceberg lettuce,
chopped
-
1 tomato, diced
-
sour cream
-
guacamole
-
hot sauce
-
ketchup

Preparation: |
Brown the ground beef and drain.
Stir in the taco seasoning. Add the refried beans. If they
are fairly dry, add some of the liquid from the peas Stir.
(Should be a mashed potato consistency.) Drain liquid from
peas. Add the peas to the beef mixture. Top with the
mozerella cheese and reduce heat. Ready to serve when the
cheese is melted.

Serve the beef mixture over a bed
of crushed taco chips. Top with shredded lettuce, tomatoes,
sour cream, guacamole, and hot sauce. I like to put a little
ketchup on mine also. Best if done in an electric skillet.
Otherwise, watch the heat so as not to scorch while waiting
for the cheese to melt. |

Beef tips and noodles

2 lbs sirloin tips

2 (10.75 oz) cans cream of
mushroom soup
-
2 (1.25 oz) packs beef with
onion soup mix
-
2 (4.5 oz)cans mushrooms -
drained
-
2 (16 oz) packs wide egg
noodles
-
2 cups water

Preparation: |
|
Preheat oven to 400 degrees In
13X9 casserole dish, combine the mushroom and beef onion
soups, canned mushrooms and water. Mix thoroughly and add
beef tips. Turn to coat well. Bake in preheated oven 1 hour.
While beef tips are baking bring a large pot of lightly
salted water to a boil. Add pasta and cook 8-10 minutes.
Drain. Serve with beef tips and sauce over noodles. |

Wine Burgers

Dash Worcestershire Sauce

1/2 cup "hearty" red wine

Swiss or American cheese

Preparation: |
Mix all ingredients down through
the 1/2 cup of wine, and marinate meat for 3 hours.
To make BBQ sauce, mix same ingredients, except omit egg
yolk, and add ketchup.
Grill burgers and top with Swiss cheese.

Savory Grilled Tournedos

1/3 cup A.1. Steak Sauce
-
1/4 cup ketchup
-
1/4 cup orange marmalade
-
2 tbsp lemon juice
-
2 tbsp minced onion

1 clove garlic, crushed

8 slices bacon (about 5
ounces)
-
8 (4 ounces) beef
tenderloin steaks (tournedos) about 1 inch thick
-
Mushroom halves, radishes
and parsley sprigs for garnish

Preparation: |
|
In small bowl, blend steak sauce,
ketchup, marmalade, lemon juice, onion and garlic;set aside
Wrap bacon slice around edge of each steak; secure with
string or wooden toothpick. Grill steaks over medium-high
heat for 10 minutes or to desired doneness, turning
occasionally and brushing often with 1/2 cup prepaired sauce.
Remove string or toothpicks; serve with remaining sauce.
Garnish with mushroom halves, radishes and parsley, if
desired. |

Momma's Taco Casserole

1 Can Cream of Mushroom
Soup

1 Can Cream of Chicken
Soup

2 Lbs. Ground Chuck

2 Small cans Chopped Green
Chilis

1 Chopped Onion

2 Cups Milk
-
1/2 Cup Picante Sauce
-
Flour Tortillas
-
Grated Cheddar Cheese
-
Salt & Pepper

Preparation: |
Brown the ground chuck with salt
and pepper to taste. Drain and add soups until creamy. Add
all the other ingredients to the mix EXCEPT the grated cheese
and tortillas. Cook down for 10 minutes. Preheat oven to 350
degrees. Prepare a 11X13 dish with a layer of tortillas cut
to fit. Layer meat mixture on top of tortillas. Layer cheese
on top of meat mixture. Continue to layer in that order until
pan is full. Top with cheese. Bake for 30 minutes at 350
degrees.

3-4 lb. Roast

Butter / Margarine / ICB
-
Medium Onion
-
Small can Tomato Sauce
-
1 packet Beef Bouillon (low
sodium is fine)
-
Gravy Master
-
Salt
-
Pepper
-
1 Bay Leaf
-
Water
-
Ginger Snaps

Preparation: |

Brown roast fat side down
in butter / margarine
-
Brown onion (sliced or cut)
-
Add one small (juice) glass
water and scrape bottom of pan
-
Cover meat 1/2 way with
water and tomato sauce
-
Add beef bouillon, 2 Tsp
Gravy Master, salt & pepper to taste, and 1/2 bay leaf
-
Simmer 1-1/2 to 2 hours
(adding water to keep meat half covered)
-
Add at least 12 crushed
ginger snaps and stir until dissolved
-
Simmer 1/2 hour -- remove
meat and slice
-
Strain gravy to remove
ginger snap residue

Daddy's "Almost" Famous Texas Chili

6 lbs. lean ground meat
2 lg. onions, chopped (I like them finely chopped)
1 whole lg. bunch garlic, pressed
2 cans diced tomatoes
1 can Ro-Tel tomatoes w/ Jalapenos
1 can tomato sauce
14 T. chili powder
8 T. cornstarch, dissolved in 1/4 cup water to thicken
3 T. Worcestershire sauce
4 T. season salt
2 T. sugar (brown is good too)
1 1/2 tsp. cayenne pepper
4 cans chicken broth
8 cups water
1 tsp. cumin

Preparation: |
Brown meat, add onions; sauté
until clear, add garlic, sauté for about 5 minutes. Add all
the rest except the cornstarch mixture. Simmer about 1 hour;
add cornstarch mixture. Simmer an additional 30 minutes
|

Hamburger Casserole

4 lbs. ground chuck (or
beef)
-
4-5 large potatoes
-
2 10 oz can cream of
mushroom soup
-
2 tbsp mayonnaise
-
salt and pepper
-
garlic powder

Preparation: |
-
Pre-heat oven to 350
degrees
-
Peel potatoes and put in a
bowl of water to keep them from turning brown
-
Slice potatoes and boil
until tender
-
Brown and drain ground
chuck
-
Add salt, pepper and garlic
pepper to potatoes and beef
-
Layer potatoes, and ground
chuck in a pan (approx. 9x13)
-
Pour soup mixture over the
top and put in oven
-
Bake for about 20-30
minutes uncovered in a separate bowl, mix the soup and
mayonnaise together

Cornish Pastry

Ingredients: |

2lbs plain flour
-
1lb lard half
-
tbsp salt
-
Quart of water
-
1lb skirt beef
-
2 sizeable onions
-
1 sizeable turnip
-
8 potatoes
-
Pepper/Salt to season

Preparation: |
Make pastry out of flour and lard
by creaming together to make bread crumbs, and adding water
to form a short crust pastry (can cheat and buy in
supermarket).
Chop up onions, and slice both turnip and potatoes into fine
crisp like slices. Chop up beef into cubes.
Roll out pastry into dinner plate size round.
Place potatoes, onions and turnip, onto half of pastry. so
that half is full of goodies and half is empty. Add salt,
then add meat on top, and add pepper.
Fold pastry on top to cover up veg and meat, and crimp the
edge so that it becomes a parcel.
Cook in oven at 180, or 350 farenheit, for about an hour, or
until you can stick a fork through it and it comes out clean! |
