Ingredients: |

flour
tortillas

1 small can
vegetarian beans
-
diced onion
-
shredded
cheese
-
diced green
pepper
-
salsa

Preparation: |
|
Spoon beans onto a tortilla top with onion, pepper,
cheese spoon on some salsa fold over sides and place on
plate, fold side down Microwave on high for 1 minute,
longer if cooking more than one at a time. |

These are very easy to prepare, low fat and taste great.
You can use reduced fat cheese as well. |

Susan's Baked Beans

Ingredients: |

1 (1 lb.) can
pork and beans
-
1 large can
kidney beans
-
1 can butter
beans
-
1/2 cup
ketchup
-
1 tsp
mustard
-
1 tbsp honey
-
3/4 cup brown
sugar
-
salt and
pepper to taste

Preparation: |
Partially drain all the beans. Mix all ingredients
together in a large baking dish. 9x13 works well. Bake,
uncovered, for 40 minutes at 350 degrees.

Great for picnics and large family gatherings. |

Spicy Black Bean and Tomatoes

Ingredients & Preparation: |

Heat 3- 4 T.
Oil in Frying Pan
-
Add 4-6
Cloves sliced Garlic followed by 4-6 Cloves crushed
Garlic
-
Add 1 large
can (28 -32 ounces Wholes Tomatoes, Chopped
-
Add Crushed
Red Pepper to Taste*
-
Simmer 10 to
15 minutes
-
Add a
sprinkling of Cilantro (optional)
-
Add 3 Cans
(40-50 oz total)of Black Beans Drained
-
Heat through
and serve

* I also add
garlic powder at this point Marble Cheese

Options; Can be eaten hot or cold With or without cheese
As a side dish or by its self Can add fried ground meat
Can use minced garlic that comes a jar about 3- 4
teaspoons My family eats it for B-fast, lunch and Dinner
or as a snack with corn chips, in a bowl, on flour or
Corn tortillas, with crackers, pita bread. I usually use
olive oil to fry the Garlic and just lightly brown it. |
