BLT Dip

Ingredients:
  • 1 cup real mayonnaise
  • 1 cup sour cream
  • 1 jar real bacon pits or pieces (I sometimes add a little more if I have extra)
  • 1 small onion, chopped (optional)
  • 2 tomatoes, chopped
Preparations:
Mix all ingredients and serve with crackers, chips or cocktail bread.
Comments:
 I usually make it the night before. It’s quick and easy!
 
Rudy's Redhot Salsa

Ingredients:
  • Four medium fresh tomatoes 
  • One medium sweet onion 
  • One large green pepper 
  • One bunch green onions 
  • One bunch fresh cilantro 
  • One cup olive oil 
  • Six large cloves of fresh garlic 
  • One tsp salt 
  • One tsp fresh ground black pepper 
  • Four hot jalapeno peppers (from jar) cut in half for fresh jalapeno peppers 
  • One large can of diced tomatoes in puree
Preparations:
Pour olive oil in a food processor and add garlic. Chop until garlic is almost completely absorbed in olive oil. Pour into large bowl. Dice tomatoes, sweet onion and green pepper. Process two-thirds of the fresh cilantro. Finely chop jalapeno peppers. Combine all ingredients into olive oil/garlic mixture. Add salt and pepper. Last add tomatoes in puree and mix entire mixture well. Cover and let sit in refrigerator over night. This allows the spiciness to come out.
Comments:
Serve with you favorite tortilla chips. I prefer Tostitos Restaurant Style.
 
EASY Bagel Party Dip

Serves: A house full of race fans!!!
 
Ingredients:
  • One tub of chive and onion cream cheese 
  • One jar of old English cheese 
  • 2 packages of bagels
Preparations:
Soften cream cheese, and old English cheese, and mix very well, Chill. Cut bagels into pieces.
Comments:
This a is a VERY easy and cheap recipe, that can be easily doubled if needed. A single batch can easily be served for ten dollars or less!! This is always a great party snack. Onion bagels or everything bagels tend to go over very well with this dip.
 
Awesome Taco Dip

Serves: A house full of race fans!!!
 
Ingredients:
  • 2 - 8oz. packages of cream cheese (softened) 
  • 1 - 16oz. container of sour cream 
  • 3 taco seasoning envelopes 
  • 1 pound of ground beef 
  • 1 package of shredded cheddar cheese 
  • 1 big bag of tostitos (you may want two) 
  • 2 jars of taco sauce or salsa (per taste)
Preparations:
Brown ground beef, rinse, drain, and add one and a half of the taco seasoning packages. Mix sour cream, cream cheese, and remaining taco seasoning. Mix well. In a 9X13 glass dish, spread cream cheese/sour cream mixture. Layer the hamburger next, followed by the taco sauce or salsa, and top with cheddar cheese. Chill for an least an hour.
Comments:
Depending on your taste buds, you can layer onions, tomatoes, jalapenos, olives, or refried beans. This is a great party dish that always gets great reviews.
 
Bagel Dip

Serves: aprox. 6
 
Ingredients:
  • 16oz. Sour Cream 
  • 2 tbsp. Hellmans Mayo 
  • 1 small Onion (Minced finely) 
  • 1 tsp. Garlic powder 
  • 1 tsp. Dill 
  • 1 tsp. Accent Seasoning or Seasoned Salt 
  • 1 tsp. Parsley 
  • 4 pkgs. Budding Corned Beef (Chopped) 
  • 1 pkg. of Plain Bagels
Preparations:
* Chop onion finely. * Chop corned beef into small bite size pieces. * Mix all ingredients together, except Bagels. * Chill for aprox. 1 hour. * Cut Bagels into bite size pieces.
Comments:
Make your bagels large enough for dipping. You can add more Hellmans (to taste) It is best to try recipe with the amounts specified above and add more after chilled if you think it needs more Zing. I also sometimes add some cream cheese, but not necessary. (Note remember the meat is a little salty) This is a quick easy appetizer that everyone seems to enjoy where ever I bring it...Always a hit!!! Hope its a hit with your Family & Friends.
