  Shoepeg Corn Casserole

Ingredients:
  • 8 oz. sour cream
     
  • 1 cup celery
     
  • 1/4 cup ground pepper
     
  • 1 cup onion
     
  • 1 cup cheddar cheese
     
  • 1 bag shoepeg corn
     
  • 1 can French Style green beans
Preparations:
Stir all ingredients up and smooth it all out into a casserole dish.  Take one sleeve of Ritz Crackers and crumble them all up inside of the sleeve.  Melt one stick of butter in a sauce pan and pour the crackers into the melted butter and stir evenly.  Pour the crackers over the casserole mix and smooth out evenly.  Bake for one hour at 375 degrees.
 
Comments:
You can do the same thing with Broccoli Casserole, which is my favorite. Just use two boxes of chopped broccoli (cooked), half a big stick of Velveeta cheese chopped up, throw it all into a casserole dish, and do the same thing with the crackers as you did with the corn casserole, same temperature and time.
