  Irish Soda Bread

Ingredients:
  • 4 cups unbleached white flour 
     
  • 1 teaspoon salt 
     
  • 3 teaspoons baking powder 
     
  • 1 teaspoon baking soda 
     
  • 1/4 cup sugar 
     
  • 1/4 cup soft shortening 
     
  • 1 egg 
     
  • 1 3/4 cups buttermilk 
     
  • raisins
Preparations:
Preheat oven to 375. Combine the flour, salt, baking powder, baking soda, sugar and raisins. Cut in the shortening with a pastry blender or a fork until crumbly. Beat the egg and add to the buttermilk. Add it to the dry ingredients and stir just until blended. Turn out on a floured board and knead for 2 or 3 minutes until smooth. Divide dough in half and place each piece in a well greased 8" cake or pie pan. Cut a cross on each loaf with a sharp knife. Bake for 35 to 40 minutes.
 
Comments:
Good hot or cold. Can be eaten plain or with butter, jam, or anything else that's good on bread. Enjoy!
