  Fried Potatoes and Smoked Beef Sausage

Ingredients:
  • 2-4 Large potatoes cut into thin slices ( not paper thin)
     
  • One package smoked sausage (not breakfast pork sausage...use smoked beef sausage) cut into thin slices 
     
  • One small onion peeled and sliced 
     
  • Cooking oil 
     
  • Garlic powder (optional) 
     
  • Ketchup (optional)
Preparation:
Pour cooking oil in large frying pan a little less than half full. Heat on high. (oil can get too hot, so turn down heat accordingly.) Add potatoes and onions. When potatoes are soft add smoked sausage. You may not need to add the whole package, so just eyeball it. Add a couple shakes of garlic powder(not too much)and fry until potatoes are golden and sausage has crispy edges. Scoop out of pan and into strainer. Drain off excess grease in the sink and blot with paper towels. Serve with ketchup.

We call this southern poor folk food. My Nanna made fried potatoes all the time. I had this a ton when I was kid and when I first got married we lived on it! It's really good though :) And simple.  Serves 2-4.
